The ubiquitous traditional bread found in many American Homes is a rounded bread with a fluffy interior that is partially sweet and is great accompanied by stews or any dishes with sauce as it is great at absorbing these plates. These sweet southern rolls are a favorite in many kitchens.
Where It all Started- The dinner roll has origins in the 13th colonies of the United States with most indications giving the location of Boston, Massachusetts as the main source of foundation. These traditional rolls eventually evolved into the beloved sweet southern rolls.
Contents and what they do
Yeast- Used since the origin of civilization, yeast has been a vital component for allowing us a source of carbohydrates from bread. Without it, the complexities of flavor and different variations of techniques humanity has created would be grossly undermined. Additionally when utilizing yeast in order to activate it you must allow it to come alive by letting it set in temperatures from 90-100. Anything over 110 may kill your chances of even starting the process of fermentation.
Once the yeast is added to the mixture it begins the process of fermentation where it oxidizes and allows the bread to expand. In order to allow the bread to proof one must allow it to rest at room temperature for several hours with it being covered. This process is essential for perfect sweet southern rolls.
Butter- The component of fat that gives our hot rolls the fluffy texture that we all crave for. It’s important that the butter is set at room temperature for some hours prior to adding into the mixture as it will not fully mix if it’s immediately taken out of the fridge
Cooking spray- a necessity when allowing the dough to proof. Spray the bottom of the bowl so no sticking occurs! It’s a small step but makes working with sweet southern rolls’ dough much easier.
Tips to Avoid In Bread making–
– when adding the liquid mix to the flour make sure to add it in small increments as it is easier for the process of mixing to occur
– kneading the dough is a critical process in allowing the bread to conform to shape and texture. Make sure to flour your board and rolling pin to prevent sticking
You don’t want to overwork your gluten strands so make sure that the consistency while being mixed is elastic and smooth but not tearing. This is particularly important for making the perfect sweet southern rolls.

– Yeast, Active dry
– water, warm
– cold milk
– sugar, granulated
– salt
– all purpose flour
– butter
Cooking spray
Substitutions
– Crisco Vegetable shortening can be a great alternative to butter for this recipe, though I do think the flavor profile from the butter cannot be replicated and is the much preferred option for sweet southern rolls.
– Cooking spray can be replaced with any source of fat preventing sticking from the dough.

METHOD
Sprinkle yeast over water. (Do not use temperatures over 110)
Place Cold Milk in mixer bowl; add sugar and salt until dissolved. Add yeast solution for the sweet southern rolls.
Slowly add flour to liquid solution- Using a kitchen aid if possible mix at low speed for 1 minute. If not utilize a mixing bowl and whisk and mix until flour is completely incorporated. (You want the dough to be somewhat elastic but not sticking completely to the dough.
Add the butter and mix at medium speed for 10 minutes until dough is smooth and elastic. Dough temperature should be between 78 F. To 82 F.
FERMENT: Cover. Set in warm place about 80 F. To 1 1/2 hours until doubled in size
PUNCH: divide dough into make each ball into 14 oz pieces. MAKEUP: Shape each piece into smooth ball; let rest 10-20 minutes.
PROOF: At 90 F. About 1 hour or until double in bulk
BAKE: using at 350 F. Convection oven, bake for 10 to 15 minutes or until golden brown, on high fan, open vent. This is the final step for making the delicious sweet southern rolls.
