Ingredients
2 Jars of Vanilla Frosting– for we will add additional berry syrup to bring out that special flavor in your berry cake.
2 Cartons of Chocolate cake mix– I believe berry and chocolate taste well together. The tarty rich blend brings indulgence to any company and really complements the Berry Blast Cake.
1 cup of Hershey cocoa mix- for a richer chocolate taste
1 cup of sour cream- Sour cream brings out moisture in cake products from its dairy content. It also retains moisture longer when added.
2 Tbsp vanilla
Jar of German Chocolate frosting- I love German chocolate frosting. This frosting adds a nice smooth and crunchy finish to the cake.
1 Cup of Blueberries-
1 Cup of raspberries– The berries will be used for the syrup that we will blend with the frosting- reserve some for garnish. This way, your cake stays true to the Berry Blast name.
1 Cup of Blackberries
Mint for garnish
Purple dye or red and blue if you have available
3 cups of water– for the syrup
2 cups of sugar– for the syrup
Powdered Sugar– 2 cups- Used for revitalizing the frosting when syrup is added in to your Berry Blast Cake.

Hints for Success!
- Allow Cake to cool for an hour before frosting so the frosting can be added on without tear.
- Use a wide flat spatula for going around the edge with frosting on your Berry Blast Cake. Keeping the frosting neat will help the cake look its best.
- Poke a hole through the cake for checking doneness. If no batter shows on the tip, then it’s good!
- Let your syrup cool before adding to frosting. Otherwise, the content will melt and alter the texture of your Berry Blast Cake.

| Cake (Yield- 2) Chocolate cake mix- 2 boxes Hershey cocoa mix- 2 cups Sour Cream- 2 cups Vanilla- 2 TBSP 4 eggs 6 cups of water Frosting & Syrup Water- 3 cups Sugar- 3 cups Berries- 3 cups of each berry Garnish > -Berries -Mint leaf -Cinnamon | Preheat oven to 350 Frosting -Heat a pan to medium heat and add your water & sugar -Mix and once at a simmer start adding your berries -Allow to simmer for 10 minutes -Once berries are soft, smash to incorporate -Allow to simmer for another 10 minutes -Fully mix in the berries and set syrup aside -Allow to cool Cake. In a large bowl add your dry mix (Hershey Cocoa & Cake mix) In a separate bowl add your water, eggs and vanilla extract Whisk and add into dry mix Place mix into two cake pans Place in oven for 20 – 30 minutes Check for doneness Frosting> -Place two jars of frosting into a large bowl -Add your syrup -Mix -Add your powdered sugar to thicken frosting Set aside Cake -Once cake is cooled, cut off tip of top layer of one cake (this helps stability) -Apply German chocolate frosting -Add second half on top -Apply berry frosting around cake with flat spatula Use a circular motion to enhance quality -Add your berries as a garnish and you are all set -Hope you enjoy this delicious Berry Blast Cake! |
